The Chairman of Tower Estate, Australian wine legend Len Evans, was able to bring together a group of people and build a winery where cost was not a constraint. Despite being a modern winery, the winery has been set-up for hand made wines. Nothing is ever rushed: for example the fruit is stored in a cool room at 2 degrees before it is processed.
